This is a dish that Chinese food lovers will admire. This Subgum Fried Rice is full of colorful vegetables and rice with delicious spices added to make it even more delicious.

The Subgum Fried Rice has many versions. I see some food blogs make it with chicken, and some use beef. I didn’t use any kind of meat in my recipe because I wanted it to be light and enjoyed as a side dish with Spanish Curry. I used red bell peppers because I love them so much, and I also used corn and carrots.

The combination of ingredients gives the plate a colorful look with different flavors. Also, making this Subgum Fried Rice is not hard, and you can add any additional vegetables you like. As I said before, you can add chicken, beef, or any meat you like the most.

What is Subgum Fried Rice?

This is a Chinese dish that contains many ingredients together. It usually includes rice, some vegetables, and a meat of your choice. The dish is so delicious with many flavors combined in one plate. Some people use noodles instead of rice. In my recipe, I didn’t use any meat at all, just vegetables and corn to be served as a side dish. Of course, the taste was still so delicious.

Ingredients:

  • 2 cups cooked rice (preferably chilled)
  • 1/2 cup diced carrots (cut into small squares)
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Kitchen Equipment:

  • Large skillet or wok
  • Cutting board and knife for chopping vegetables
  • Spatula or wooden spoon for stirring
  • Measuring cups and spoons
  • Bowl for beating eggs

how to Make Subgum Fried Rice?

Step 1:

First, rinse 1 cup of rice in a strainer. Put it in a pot with 2 cups of water and turn on the stove. When it starts bubbling, turn it down low and cover it with a lid. Let it cook for about 15-20 minutes until it’s soft. Turn off the stove and wait for 5-10 minutes with the lid on. After it’s done, let it cool in the fridge for at least 1 hour before using it for fried rice.

Step 2:

Heat 1 tablespoon of oil in a big pan on medium-high heat until it sizzles.

Step 3:

Cook the diced carrots in the hot oil, stirring them around until they start to feel soft, which usually takes about 2 to 3 minutes.

Step 4:

Add in the frozen corn kernels, peas, red bell pepper, onion, and minced garlic, and let them cook together for another 3 to 4 minutes.

Step 5:

Push all those tasty veggies to the side of the pan, making space for another tablespoon of oil right in the middle.

Step 6:

Now, Crack those eggs into the empty space and scramble them up until they’re all cooked and fluffy, just to know this is an optional step, sometimes I don’t add eggs at all.

Step 7:

Next, stir everything together in the pan, the rice, the eggs, and all the vegetables mixing it all up really well.

Step 8:

Pour in the soy sauce and keep stirring for another 2 to 3 minutes. Don’t forget a pinch of salt and pepper to taste. Enjoy.

Some Tips!

  • Don’t forget to Rinse the rice in a strainer with water until the water is clear.
  • Try to Cut the vegetables into small pieces Carrots, and bell peppers are colorful and tasty!
  • Put the vegetables in the pan with a little oil. Stir them until they’re soft but still a bit crunchy.
  • Add the cooked rice to the pan with the veggies and eggs. Stir everything together so it’s mixed

How to Store Leftovers?

Store leftover vegetable fried rice in a sealed container in the fridge for up to 2 days. Warm it up in the microwave or on the stove before eating.

What to Eat with Subgum Fried Rice?

I made this Subgum Fried Rice just to serve it as a side with my main course as a curry dish or chicken Sinatra But It also goes well with Chicken Alfredo or Chicken Tikka Masala. I saw some people love it with grilled shrimp, And for drinks, you can enjoy it with iced green tea, lemonade, or a mango lassi.
