This is a creative recipe I came up with last Monday, mixing muffins with ice cream to make this sweet and delicious Blueberry Muffin Ice Cream.

Now that it’s summer, there’s no better time to be creative with ice cream recipes. I’ve already shared some of my favorites, like Mamey Ice Cream and of course a copycat of the famous Chick-fil-A Ice Cream. This time, I’ve mixed one of my favorite muffins, blueberry, with ice cream and topped it with raisins. The combination of the sweet muffin flavor and the cold texture of the ice cream is amazing. Even my kid, who isn’t usually a big fan of blueberries, adores it. This recipe will inspire you to create many more delicious ice cream combinations.

  • 1 cup fresh or frozen blueberries
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed blueberry muffin
  • 1 tablespoon lemon juice

How to Make Blueberry Muffin Ice Cream?

Step 1:

First, Put blueberries and sugar in a pot and cook until the blueberries pop and the mix is thick. Let it cool.

Step 2:

In a big bowl, mix cream, milk, and vanilla. Add the cooled blueberry mix and lemon juice.

Step 3:

Put the bowl in the fridge for 2 hours so it gets really cold.

Step 4:

Pour the cold mix into the ice cream maker and follow the instructions. It takes about 20-25 minutes.

Step 5:

In the last 5 minutes, add crushed muffin pieces to the ice cream.

Step 6:

After that, Put the ice cream in a container and freeze for 2 hours to make it firm. Add some Raisins on top of your ice cream and Enjoy.
