I miss New York during the fall. It’s funny how certain smells can take you right back to a place. As fall rolls around again, I started thinking about those wonderful street vendors with the roasted nuts. Oh, that heavenly sweet smell! Since I’m back on my Keto grind this year, I was looking for a few Easy Keto Friendly Snacks, and these turned out Ahhmazing!
Luckily, little nuts are good for the keto diet. By using key ingredients like Swerve brown sugar, I can recreate my favorite fall feeling from New York City and make Keto Caramel Pecans. They take only 12 minutes of your active time. The rest of it is all on you distracting yourself for the next 2 hours until they cool and come to that perfect crispy texture.

Easy Keto Friendly Caramel Pecans
Ingredients
- 1½ pecan halves
- ¼ cup butter
- ¾ cup Swerve brown sugar
- 1 tsp vanilla extract
Instructions
- In a saucepan over medium heat, melt the butter.
- Add the brown sugar and stir until combined.
- Add vanilla extract and combine.
- You can cook it for up to 7 minutes but I did this recipe at about 2 minutes as I wanted a thicker coating.
- Remove from heat and add in pecans. Make sure to coat them well.
- Put your coated pecans on a sheet lined with parchment paper and place in the fridge for 2 hours to cool completely.
- Once cooled, break apart and enjoy!
