I miss New York during the fall. It’s funny how certain smells can take you right back to a place. As fall rolls around again, I started thinking about those wonderful street vendors with the roasted nuts. Oh, that heavenly sweet smell! Since I’m back on my Keto grind this year, I was looking for a few Easy Keto Friendly Snacks, and these turned out Ahhmazing!
Luckily, little nuts are good for the keto diet. By using key ingredients like Swerve brown sugar, I can recreate my favorite fall feeling from New York City and make Keto Caramel Pecans. They take only 12 minutes of your active time. The rest of it is all on you distracting yourself for the next 2 hours until they cool and come to that perfect crispy texture.
They’re SO worth the wait. If you’ve been to NYC and you’ve had those caramel pecans from the street carts you just KNOW. And if you don’t, it’s time to get yourself a keto-friendly treat ASAP.
There’s no giant laundry list of ingredients either. It takes just 4 ingredients and you’ll be on your way to making your home smell like an intoxicatingly delicious caramel pecan.
If you’re new to keto, then you know that sugar is a no-no. It kicks you out of ketosis. But what most new keto dieters don’t know is that Swerve is keto-friendly. You can substitute it cup for cup in any recipe (just watch out for any other ingredients that might not be keto-compliant). It’s very tasty, like the real deal, and caramelize like sugar. It’s made from oligosaccharides and erythritol, plus it has a super-low GI rating.
For me, having Swerve is a game-changer for going keto because I can get my sweet fix without ruining my healthy lifestyle goals. And now, I can get my caramel pecans without having to go all the way to NYC to find them!
So, round up your ingredients and get ready to make a perfectly keto friendly snack that even non-keto dieters will love. Bonus: make a big batch and wrap them well in airtight jars, tie with bows, and give them as gifts during the holiday season!
