Making this fricassee cake is really a challenge for me. Once I saw the ingredients and the directions, I was pretty sure that the recipe would take some effort and some creativity, which I like, to be honest.

I saw this fricassee cake on many blogs I follow, and I was impressed, I didn’t know that there was a fricassee cake recipe, So I made my own fricassee cake With Chicken, A soft cake with a creamy and delicious filling inside that sure worth every effort in the kitchen.

I prefer to make it with chicken, just because I have good experience making the chicken filling before, Also I love chicken tenders with some creamy sauces.

The recipe turned out perfect for me. I made six small cakes because my skillet was small and could only fit six at once. Six cakes are enough for me and my husband since my little kid can’t eat spicy food. However, I still have some batter left in the refrigerator for later use.

Adding jalapenos is a personal preference for me, as I enjoy that little spiciness it adds. However, you can skip the jalapenos and still have a delicious meal by just adding the Chicken Fricassee Filling into the batter.

It’s a soft cake with a tasty filling inside, It will take around 1 hour to make, you need to make the Chicken Fricassee Filling separately and the batter as well, The Fricassee Filling is made with 11 ingredients, the main one is chicken which is you need to have it cooked and ready to use, and just to know you can replace the chicken with any meat you prefer, and the batter is like any batter you always make, and then mix the cake with the filling and cook your desire portions it in a skillet.

Ingredients

Chicken Fricassee Filling:

  • 2 cups of cooked, shredded chicken
  • 2 tablespoons of butter
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of mushrooms, sliced

  • 1 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1/4 teaspoon of dried thyme

  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 2-3 fresh jalapenos, finely chopped
  • 1 tablespoon of olive oil (for cooking)

How to Make this fricassee cake?

Making The Chicken Fricassee Filling:

Step 1:

In a large skillet, melt 2 tablespoons of butter over medium heat. Wait until the butter is completely melted and Make sure to spread the butter evenly across the bottom of the skillet to prevent sticking.

Step 2:

Add 1 small chopped onion and 2 minced garlic cloves to the melted butter. Cook until the onion becomes translucent, This will take about 3-4 minutes.

Step 3:

Now, add 1 cup of sliced mushrooms to the skillet. Stir the mushrooms together with the onions and garlic. Cook them. This usually takes about 5 minutes.

Step 4:

Sprinkle 2 tablespoons of flour over the cooked vegetables in the skillet. Stir well to combine the flour with the veggies. This is called making a roux, which helps to thicken the sauce. Cook the mixture for about 1-2 minutes.

Step 5:

Gradually pour in 1 cup of chicken broth, Pour slowly and keep mixing to ensure the broth blends smoothly with the roux. Cook for about 2-3 minutes until the sauce starts to thicken.

Step 6:

Stir in 1/2 cup of heavy cream and 1/4 teaspoon of dried thyme. Mix everything together. Add a pinch of salt and a bit of pepper to taste. Continue to cook the mixture for another 2-3 minutes until the sauce turns so creamy.

Step 7:

Add 2 cups of shredded chicken to the skillet. Stir well to coat the chicken with the creamy sauce. Cook for an additional 2-3 minutes until the chicken is heated through. If using fresh parsley, stir in 1 tablespoon now.

Step 8:

Remove the skillet from the heat and let the filling cool slightly before using it in the cake batter.

In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of black pepper. In another bowl, whisk together 1 cup of milk and 2 large eggs until well combined. Gradually add the wet ingredients to the dry ingredients.

Step 2:

Now, fold the cooled chicken fricassee filling and 2-3 finely chopped fresh jalapenos into the batter. Stir until everything is evenly distributed. Be careful not to overmix, as this can make the cakes tough.

Step 3:

Heat a skillet over medium heat. Add a little olive oil to coat the surface. Spoon small portions of the batter onto the skillet, shaping them into small cakes. Cook for about 3-4 minutes on each side, or until the cakes are cooked through. Use a spatula to flip them carefully to avoid breaking.
