This is a dessert that mixes two tasty things: crispy sopapillas and cold ice cream. Sopapillas are so fluffy and crunchy, fried pillows. When you put a scoop of creamy ice cream on top, it gets even better, The juiciness of the ice cream melds over the fried pastry which adds a special taste to it, You can eat them together, with a hot cup of coffee as a snack or as a sweet dessert after your main dish, This Sopapilla with Ice Cream makes a great combination that everyone should try it.

Ingredients:

For Sopapillas:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup warm water
  • Vegetable oil for frying

For The Ice Cream:

  • 2 cups vanilla ice cream (or any preferred flavor)
  • 1/2 cup chopped tangy fruit (such as tamarind pulp or another tangy fruit of choice)

Chocolate Drizzle (Optional):

  • 1/2 cup chocolate chips or chopped chocolate
  • 1 tbsp butter or vegetable oil

How To Make Sopapilla with Ice Cream?

For Sopapillas:

Step 1:

In a large bowl, combine the flour, baking powder, and salt. Gradually add warm water, mixing until a smooth dough forms. Cover with a cloth and let it rest for 10 minutes.

Step 2:

Divide the dough into small balls, about the size of golf balls. Roll out each ball into thin ovals, approximately 1/8 inch thick. sometimes I create a square shape, it depends on how you like it.

Step 3:

Heat vegetable oil in a frying pan over medium-high heat. Fry the sopapillas one at a time, turning once, until they puff up and turn golden brown, about 1-2 minutes per side. Drain on paper towels to remove excess oil.

Step 4:

While frying the sopapillas, keep them warm in a low-temperature oven (about 200°F or 95°C) until ready to serve.

For The Ice Cream:

Step 1:

Allow vanilla ice cream to soften slightly at room temperature.

Step 2:

Mix in chopped Pineapples until evenly distributed throughout the ice cream. Just to know, the ice cream flavor is up to you, I prefer to use Pineapples as it is one of my favorite fruits.

Step 3:

Transfer the ice cream back into the freezer to firm up while preparing the sopapillas.

Chocolate Drizzle:

Step 1:

In a microwave-safe bowl, melt chocolate chips or chopped chocolate with butter until it turns glossy. Stir occasionally to ensure even melting.

Step 2:

Place a warm sopapilla on a serving plate. Scoop a generous portion of the ice cream onto the sopapilla.

Step 3:

Drizzle with the optional chocolate sauce, and Drizzle it with the chocolate sauce. Enjoy.

    This dessert is tastiest when it’s fresh because the sopapillas get soft if you keep them for too long. If there’s any left, put them in a closed container in the fridge. When you want to eat them again, warm up the sopapilla in a toaster oven or regular oven until it’s warm. Then, add the ice cream and chocolate right before you eat it.
