This is another ice cream I made using pine nuts. I’ve never used pine nuts before in any recipe, but they add a special taste to this Pinon ice cream.

I love being unique and creating new flavors, especially in ice creams. I wasn’t sure how this Pinon ice cream would turn out since I’m not familiar with pine nuts, but in the end, I was pleasantly surprised. The taste was good and perfect for enjoying on a hot day.

Like I said I always enjoy making this kind of ice cream. I like to add new ingredients each time to make it more unique. It’s interesting that each batch of Pinon ice cream turns out with a different color, even when I use the same ingredients. Sometimes it’s weird because the color can change unexpectedly, but most of the time, it ends up with a creamy white color.

What is Piñon Ice Cream?

This Pinon ice cream has a unique taste based on the flavor of toasted pine nuts. These nuts add a nutty sweetness to the ice cream, Which offers a different taste unlike any regular ice cream flavors, Also heavy cream, whole milk, sugar, egg yolks, and vanilla extract are used, so the preparation is easy and simple for anyone want to make it at home.

Ingredients

  • 1 cup Pinon nuts (pine nuts)
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt

How to Make Pinon Ice Cream?

Step 1:

First, Put the pinon nuts in a pan on medium heat. Stir them until they spread a nice smell. Take them off the heat and let them cool.

Step 2:

In another pan, mix the heavy cream, milk, and half of the sugar. Heat it on medium until it almost starts to bubble. Don’t let it boil.

Step 3:

In a bowl, whisk the egg yolks and the rest of the sugar until creamy.

Step 4:

Slowly pour a bit of the warm cream into the egg mix, stirring all the time. Keep adding until it’s all mixed together.

Step 5:

Put everything back in the pan. Cook it on low heat, stirring until it gets thick for about 5-7 minutes.

Step 6:

Take it off the heat. Pour it through a strainer into a clean bowl to get out any bits. Stir in vanilla and a pinch of salt. Now Let it cool, then cover and put it in the fridge for at least 6 hours. Yes 6 hours or more.

Step 7:

Pour the cold mix into an ice cream maker. Follow the directions to churn it. Add the toasted nuts near the end to mix them in. Spoon the churned ice cream into a container. Freeze it for at least 2 hours until it’s solid and Enjoy.

Some Tips!

  • Toast the Pinon nuts so they don’t burn. Stir them often until they smell yummy.
  • When you mix the warm cream into the egg yolks, do it little by little. This keeps the eggs smooth and creamy.
  • When cooking the custard, Remember to keep the heat low and Stir lots so it doesn’t stick.
  • Chill the ice cream mix in the fridge for at least 6 hours. It needs to be cold before churning.
  • After churning, freeze the ice cream in a container. It takes about 2 hours to get firm and ready to scoop.

How to Store Leftovers?

Put any leftover pinon ice cream in a container with a lid and keep it in the freezer. You can store it for max 2 weeks. To keep it extra tasty, put a piece of plastic wrap right on top of the ice cream before you put the lid on.

What to Eat with Pinon Ice Cream?

Pinon ice cream has a nutty sweetness that pairs so well with chocolate brownies and crunchy cookies as well. Also, drizzle honey over a scoop or pair it with fresh berries for more freshness. Caramel sauce also adds another layer of sweetness and richness, As for drinks you can enjoy it with a cup of hot coffee or hot chocolate or a Sweet Tart Shot.
