Papas Locas or crazy fries or you can call them stuffed fries, A plate full of fries that are so crispy and topped with different flavors and cheese and cream, to make it more hearty and so delicious.

I love dishes that are based on fries and spices. Since my last Togarashi Fries, I haven’t made a similar recipe, but Papas Locas definitely holds a place among my favorite fry dishes. Each time I make it, it’s different. Today, I used beans, avocado, cheese, and jalapeños, but sometimes I add cooked bacon, caramelized onions, and bell peppers too. The toppings can vary for each person, but I always use cheese to make it cozy and creamy.

The dish is delicious without a sauce on top, But adding one on top will make it more creamy and juicy, You can add a middle sauce or a spicy one, or you can just stick with the Salsa, it’s your chocie.

What is Papas Locas?

Papas Locas, or Crazy Fries is a delicious crispy french fries with a variety of flavorful toppings in one plate. The topping is optional and depends on each person, plus cheese on top and bake for 5 minutes in the oven, and if you want to make it more special you can add a creamy sauce on top, then enjoy it, For my recipe I used Beans, Jalapenos, avocado, cilantro, and cheddar cheese of course, but each time I make it unique and different from the last one.

Ingredients

  • 4 large potatoes (or frozen french fries)
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 avocado, diced
  • 1/4 cup pickled jalapeños (optional)
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/2 cup beans
  • Salt and pepper to taste
  • Vegetable oil for frying

Kitchen Equipment Needed

How to Make Papas Locas?

Step 1:

Prepare fresh potatoes by washing, peeling, and cutting them into thin strips. Heat vegetable oil in a large frying pan, then fry the potato strips for about 5-7 minutes. For frozen fries, follow the package instructions for baking or frying. Once cooked, drain the fries on a paper towel-lined plate to remove excess oil and season with salt and pepper.

Step 2:

Next, preheat your oven to 350°F (175°C). Spread the fries on a baking sheet, and sprinkle shredded cheddar cheese over them. Bake the fries in the preheated oven for about 5 minutes.

Step 3:

After baking, remove the fries from the oven and top them with salsa, diced avocado, pickled jalapeños, black beans (Just to know, you can add any additional ingredients you like), and chopped cilantro. Also, you can add sour cream over the toppings for a creamy touch. Enjoy the Papas Locas while they are hot.

  • If using frozen fries, bake or fry them according to package instructions before assembling. But it’s better to make homemade fries.
  • For the topping added, you have so many options to use, Sometimes I used tomatoes, baked ham, and even chicken.
  • If you want to add some creamy taste you can a sour cream or a sauce of your choosing.

How to Store Any Leftovers?

Just put them in a container with a lid and keep them in the fridge for up to 24 hours. To eat your fries again, put it on a baking sheet and bake at 350°F (175°C) for about 10 minutes.

I love to enjoy my Papas Locas as a snack with some other meals, So You have so many delicious sides to consider, Lots of people I know love to enjoy it like nachos with some guacamole for a classic combo, or try it with black bean salad or Mexican rice. Also, you can Complete your meal with a slice of Tea cheesecake for a sweet ending. For drinks, enjoy it with a cold glass of horchata or just a regular lemonade.
