This Maui Banana Bread is perfect for people who love tropical and sweet flavors like me. It’s a tropical banana bread with simple ingredients, making it easy to make, and the taste is truly delicious.

I told you I’d share many banana bread recipes, but I didn’t plan to include this Maui Banana Bread, it wasn’t on my list. However, a friend who lives in Maui and knows lots of Hawaiian recipes shared it with me after seeing my last banana bread recipe, which was Persimmon Banana Bread.

When I first looked at the ingredients, I was really excited to try it because I’d never used pineapple in banana bread before. I couldn’t wait to taste the new flavors and see how they turned out.

The recipe overall is as easy as any banana bread recipe, but the unique touch of pineapple and shredded coconut gives it a beautiful tropical flavor. The taste was delicious, sweet, and more fruity than my last banana bread recipe.

Maui Banana Bread is a tropical version of classic banana bread, famous in Maui, Made with bananas, pineapple, coconut, and other classic ingredients, this bread offers a sweet, fruity taste with a hint of tropical flavors in each bite you will have. Unlike traditional banana bread, which relies solely on bananas for sweetness, Maui Banana Bread is based on two fruits (Banana and Pineapple), which gives it that special taste, It’s a great version to make if you love fruity, tropical flavors inside your classic banana bread.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 3 ripe bananas, mashed
  • ½ cup crushed pineapple, drained
  • ½ cup shredded coconut

How to Make Maui Banana Bread?

Step 1:

Turn on the oven and set it to 350°F (175°C), and Grease a 9×5-inch loaf pan with butter.

Step 2:

In a big bowl, Mix together the flour, sugar, baking powder, baking soda, and salt until everything is well combined.

Step 3:

In another bowl, beat the butter with a spoon or mixer until it’s smooth and creamy. Then add the eggs one at a time, mixing well after each egg.

Step 4:

Stir in the mashed bananas, crushed pineapple, and shredded coconut until everything is mixed well.

Step 5:

Slowly add the dry ingredients from the first bowl to the wet ingredients, mixing until just blended. If you like, you can also add walnuts at this step and mix them in.

Step 6:

Pour the batter into the greased loaf pan and use a spatula to smooth the top of the batter, Now this is an optional step but it is fun and makes the bread look so beautiful at the end, Slice a Banana from the button to top, then put the first half in the right side and the other slice in the left side, Then Place the pan in the oven and bake for 60-70 minutes. After that Let the bread cool, get a slice, and Enjoy.

  • The butter should be soft before mixing. You can leave it out at room temperature for about an hour.
  • If you want to use canned pineapple, drain it well to avoid adding excess liquid to the batter.
