2 cups cooked rice (preferably chilled) 1/2 cup diced carrots (cut into small squares) 1/2 cup frozen corn kernels 1/2 cup frozen peas 1/2 cup diced red bell pepper 1/2 cup diced onion 2 cloves garlic, minced 2 eggs, beaten 3 tablespoons soy sauce Salt and pepper to taste 2 tablespoons vegetable oil

First, rinse 1 cup of rice in a strainer. Put it in a pot with 2 cups of water and turn on the stove. When it starts bubbling, turn it down low and cover it with a lid. Let it cook for about 15-20 minutes until it's soft. Turn off the stove and wait for 5-10 minutes with the lid on. After it's done, let it cool in the fridge for at least 1 hour before using it for fried rice.
