In a medium saucepan, combine the heavy cream, whole milk, and half of the sugar. Heat the mixture over medium heat until it is hot but keep stirring.

While the cream mixture is heating, whisk the egg yolks and the remaining sugar in a separate bowl until the mixture becomes pale.

Add a small amount of the hot cream mixture to the egg yolk mixture while you whisking. This will slowly raise the temperature of the eggs.
