1/2 cup minced onion 1/2 cup peanut oil 1/3 cup rice vinegar 2 tablespoons water 2 tablespoons minced fresh ginger 2 tablespoons minced celery 2 tablespoons soy sauce 1 tablespoon ketchup

Peel the onion, ginger, and celery. Cut them into tiny pieces so they mix well in the dressing.

Put the cut veggies, oil, vinegar, water, soy sauce, ketchup, lemon juice, sugar, salt, and pepper in a blender.

Turn the blender on for about 2 minutes, until everything is smooth. Stop and scrape the sides if needed.
