Sopapilla with Ice Cream

2 cups all-purpose flour 1 tsp baking powder 1/2 tsp salt 3/4 cup warm water Vegetable oil for frying 2 cups vanilla ice cream (or any preferred flavor) 1/2 cup chopped tangy fruit (such as tamarind pulp or another tangy fruit of choice)

In a large bowl, combine the flour, baking powder, and salt. Gradually add warm water, mixing until a smooth dough forms. Cover with a cloth and let it rest for 10 minutes.

Divide the dough into small balls, about the size of golf balls. Roll out each ball into thin ovals, approximately 1/8 inch thick. sometimes I create a square shape, it depends on how you like it.

Heat vegetable oil in a frying pan over medium-high heat. Fry the sopapillas one at a time, turning once, until they puff up and turn golden brown, about 1-2 minutes per side. Drain on paper towels to remove excess oil.
